Wednesdays Unplugged – Five Minute Fudge

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

RECIPE OF THE WEEK

In my mother's honor I am posting her simple fudge recipe this week… it seems like the right time for chocolate, the ultimate comfort food.

FIVE-MINUTE FUDGE

recipe from Alphie Bunde

  • 2/3 cup evaporated milk
  • 1 2/3 cup sugar
  • 1/2 teaspoon salt
  • 1 1/2 cups (16 medium) diced marshmallows
  • 1 1/2 cups chocolate chips
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts

Mix undiluted evaporated milk, sugar and salt in sauce pan over low heat. Heat to boiling, then cook 5 minutes, stirring constantly. Remove from heat. Add marshmallows, chocolate chips, vanilla and nuts. Stir 1-2 minutes, until marshmallows melt. Pour into buttered 9-inch pan. Cool, cut into squares.
