Wednesdays Unplugged – Chicken Penne Pasta Toss

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

What a week! Yesterday was my birthday and my husband outdid himself this year… we have been celebrating with surprises, adventures and wonderful gatherings since last Friday!   What a guy… what wonderful friends and family!!!

RECIPE OF THE WEEK

This week's recipe was served by friends at a recent baby book shower and it was so delicious I asked for the recipe. It came from Lunds and Byerlys recipe collection, with grilled chicken strips added.

CHICKEN PENNE PASTA TOSS

  • Pasta salad - penne1 16 ounce package penne pasta
  • 8 ounce bottle zesty Italian dressing
  • 2 large tomatoes, chopped (2 cups)
  • 7 ounce jar sun-dried tomatoes in oil, drained & chopped (1/2 cup)
  • 8 ounces crumbled feta cheese
  • 1/2 cup chopped fresh parsley
  • 1/4 cup capers, drained
  • grilled chicken breast, chopped or sliced

Cook pasta in boiling salted water about 11 minutes, until almost tender. Rinse with cold water & drain. In large bowl, combine pasta and dressing. Stir in remaining ingredients, cover and refrigerate.
