RECIPE OF THE WEEK


This week’s recipe is a delicious black bean and corn salsa, great with tortilla chips, tacos, quesadillas, etc… found online at kaboose.com.


BLACK BEAN and CORN SALSA


  • Mexican-bean salsa 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (frozen, canned or fresh cooked)
  • 1/2 medium sweet red pepper, chopped
  • 1/2 medium red onion, chopped
  • 1/2 cup ripe tomato, finely diced
  • 1/4 cup chopped cilantro
  • 4 green onions, chopped
  • 2 fresh jalapeno peppers, seeded and minced
  • 2 cloves garlic, minced
  • 2 tablespoons lime juice
  • 1 teaspoon salt


Mix all ingredients together and refrigerator at least an hour before serving.
