Wednesdays Unplugged – Pasta Salad with Broccoli, Pepperoni and Cheese

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

RECIPE OF THE WEEK

This week's recipe is a simple pasta salad that I associate with summer, but is delicious any time of year.

PASTA SALAD with BROCCOLI, PEPPERONI and CHEESE

  • Pasta salad - pepperoni 16-ounce package rotini pasta
  • 1/4 pound sliced pepperoni, rounds cut in half
  • 12-ounce package Broccoli Wokly, broken into small pieces
  • 1 pint grape tomatoes, cut in half
  • 8-ounce fresh mozzarella cheese ball, cubed
  • 1/2 pound cheddar cheese, cubed
  • Shredded parmesan cheese
  • 16-ounce bottle Italian salad dressing

Cook pasta according to package directions, about 8-10 minutes in lightly salted boiling water. Drain and rinse pasta twice, put into large bowl. Add pepperoni, broccoli, tomatoes, mozzarella and cheddar cheese. Add dressing and mix well. Garnish with shredded parmesan cheese and refrigerate at least an hour before serving.
