RECIPE OF THE WEEK
This week's recipe is a simple pasta salad that I associate with summer, but is delicious any time of year.
PASTA SALAD with BROCCOLI, PEPPERONI and CHEESE
- 16-ounce package rotini pasta
- 1/4 pound sliced pepperoni, rounds cut in half
- 12-ounce package Broccoli Wokly, broken into small pieces
- 1 pint grape tomatoes, cut in half
- 8-ounce fresh mozzarella cheese ball, cubed
- 1/2 pound cheddar cheese, cubed
- Shredded parmesan cheese
- 16-ounce bottle Italian salad dressing
Cook pasta according to package directions, about 8-10 minutes in lightly salted boiling water. Drain and rinse pasta twice, put into large bowl. Add pepperoni, broccoli, tomatoes, mozzarella and cheddar cheese. Add dressing and mix well. Garnish with shredded parmesan cheese and refrigerate at least an hour before serving.
