NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. Spring is in the air, and we had a glorious weekend. We used an unexpected free day to go with grandkids to see the baby animals at the zoo. A good time was had by all!
RECIPE OF THE WEEK
This week's recipe was a recent family request. I usually think of scalloped corn in the fall and around holidays, but it's good any time. This family standard is based on a recipe from The Joy of Cooking. I usually bake at 350 degrees with other baked dishes.
SCALLOPED CORN
- 1 pound bag of frozen whole kernel corn
- 3 beaten eggs
- 3/4 teaspoon salt
- 1 1/4 cups cream
- Crumbs for topping (bread, crackers, Panko)
Preheat oven to 325 degrees F. Beat eggs in bowl, add the rest of the ingredients and pour into straight-sided baking dish. Sprinkle with crumbs and dot with butter. Bake about 1/2 hour, until top is puffed and golden.
