NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. It feels good getting back into the regular routine after a wonderful holiday season. It will feel good to be cooking again today, this has been a busy week already, with eager buyers and sellers alike.
RECIPE OF THE WEEK
This salad recipe has become a holiday favorite…so much so that I like it any time of year. I plan to serve it tonight with some soup. I especially love the poppy seed dressing. It was fun pulling out the original recipe and seeing my hard-to-read notes, made with my left hand when I broke my wrist 6 years ago…it's actually pretty amazing I could read them at all!
RASPBERRY-ROMAINE SALAD with POPPY SEED DRESSING
recipe from Betty Crocker Holiday 2003
- 1/2 cup mayonnaise or salad dressing
- 1/3 cup sugar
- 1/4 cup whole milk
- 1 tablespoon poppy seed
- 2 tablespoons white vinegar
Mix all ingredients in small bowl with wire whisk, refrigerate until serving.
- 1 bag (10 ounces) hearts of romaine salad mix
- 1/2 red onion – thinly sliced and cut in half
- 2 cups fresh raspberries
- 2 kiwifruit – peeled, sliced and cut in half
Toss romaine and red onion with some of the dressing to coat. Top with fruit and drizzle with additional dressing. Toss lightly and serve immediately.
