NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. After 16 days of above average temperatures we are now into below average temperatures. Preciptation is way below average…no wonder I have been feeling a snow deficit!
RECIPE OF THE WEEK
This week's recipe seems more like a summer one…maybe it was those warm days we have been having that made me crave it last week. It's good any time of the year. This recipe makes a big bowl.
BROCCOLI CARROT SALAD
- 2 cups mayonnaise
- 1 cup sugar
- 2 teaspoons vinegar
- 2 (12 oz) bags broccoli wokkly
- 3/4 cup chopped red onion
- 1 cup sunflower seeds
- 12 oz package bacon, cooked, cooled and crumbled
- 10 oz bag matchstix carrots
Mix mayonnaise, sugar and vinegar, set aside. Mix together broccoli, onion, sunflower seeds, bacon and carrots. Pour dressing over mixture (may not need it all), mix, cool and serve.
