Wednesdays Unplugged – Quick and Easy Salsa

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Our Wednesday dinners have been on hiatus the last couple weeks because of the flu, colds and pneumonia. So far both of our children's households have been hit but not ours…hoping it stays that way! We are heading up north to the south shore of Lake Superior tomorrow for a fall getaway with dear friends. It will be wonderful regardless of the weather…I hope it's not tooo nice, I love the crashing waves of fall!

Radbday09 Last Saturday was the 4th birthday of one of our grandsons, and those of us who were healthy gathered to celebrate. In case you can't tell, he loves tigers, and was very specific about what he wanted on his birthday cake…a tiger holding a baby tiger and a slice of watermelon (over his head), with pink flowers all around it!

RECIPE OF THE WEEK

I recently searched my blog posts for this recipe for quick and easy salsa but didn't find it. I decided it was time to record it before I lost it! With the full can of jalapenos the sauce is pretty hot…adjust the amount of peppers to taste.

QUICK AND EASY HOT SAUCE

  • Salsa 28 ounce can whole tomatoes
  • 1 small onion, quartered
  • Cilantro, few sprigs to taste
  • 1 tablespoon kosher salt
  • 4 ounce can sliced jalapeno peppers
  • Juice of 1 lime
  • 3 cloves garlic

Put everything into a food processor and blend to desired consistency. Refrigerate for a few hours to allow the flavors to blend.
