Wednesdays Unplugged – Apple Pecan Sour Cream Bars

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

What a week! It has been surreal seeing white snow capping blooming flowers…having the ground covered with not just the colored leaves of fall but also with green leaves from the early freeze…all frosted with snow. Makes me think of the famed Halloween blizzard…was that really more than 20 years ago?!

On top of that, our family continues to be running fevers…one grandson woke up with a fever of 104.5 yesterday…another was sent home from nursery school with a fever of 102.5 yesterday…and our daughter just called with a fever of 101.8! So far I am doing ok…knock on snow!!!

RECIPE OF THE WEEK

We got a bag of Haralson apples straight from our daughter-in-law's parents' apple tree so of course I had to search for something new to try in addition to my old stand-bys. I didn't expect my husband to like these bars because they have nuts and he doesn't like nuts…but he loved these bars! Found the recipe at SouthernFood.About.com.

APPLE PECAN SOUR CREAM BARS

  • Applebars 2 cups flour
  • 2 cups brown sugar, firmly packed
  • 1/2 cup butter
  • 1 cup chopped pecans or walnuts
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 teaspoon vanilla
  • 1 egg, lightly beaten
  • 2 cups finely chopped apples

In a large bowl, mix flour, brown sugar and butter with a pastry blender or on low speed with a mixer until crumbly. Stir in nuts. Press 2 3/4 cups of this mixture into a 9 x 13-inch pan lined with parchment paper.

To remaining mixture, add cinnamon, baking soda, sour cream, vanilla and egg. Blend well. Stir in apples. Spread evenly over base. Bake at 350 degrees F for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
