NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. We are continuing our stretch of family celebrations…last week was filled with two birthdays, an anniversary and baby Sina leaving NICU…still in the hospital but doing great and getting bigger and stronger every day.
RECIPE OF THE WEEK
Last week was our son-in-law's turn to pick the menu. He picked deviled eggs (yum!), Bakesale Betty's Fried Chicken Sandwich (double yum!) and haystacks. I seriously considered running my first repeat recipe with Bakesale Betty because it is so amazing but decided to do haystacks instead because our granddaughter also requested them for her birthday dinner this week! If you haven't tasted Bakesale Betty's sandwich, however, it's time to consider it…this is its third birthday dinner request since I first made it about a year ago! The coleslaw topping with the chicken is wonderful, delicious with or without a bun, whether or not you like cole slaw!
The haystacks have been a simple holiday staple in our household for decades, a recipe from my North Dakota Aunt Rena. Last week I learned why we usually make them in the winter…they can be sticky in hot weather…just don't leave them out in the summer heat.
HAYSTACKS
- 12 ounce bag butterscotch chips
- 3/4 cup peanut butter
- 12 ounce bag chow mein noodles
Melt butterscotch chips, add peanut butter. Pour over chow mein noodles, mix to coat and quickly drop by spoonfuls onto waxed paper. They will harden as they cool.
