Wednesdays Unplugged – Corned Beef Hotdish

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

I am spending the day today with my Grandson, so it seems appropriate to share a recipe that is a kid favorite.

RECIPE OF THE WEEK

This recipe was served by my mother when I was a kid, our kids loved it, and now their kids ask for it. Definitely not gourmet, but definitely a simple kid favorite.

CORNED BEEF HOTDISH

  • Cornedbeefhotdish 1/2 of 1 pound package of macaroni
  • 1 can corned beef
  • 1 can cream of chicken soup
  • 1/2 pound Velveeta cheese, cubed
  • 1 can whole kernel corn, drained
  • 1 cup milk
  • 2 tablespoons instant onion
  • crumbs on top (bread, ritz, corn flakes)

Cook macaroni according to package directions, drain. Combine with rest of ingredients, pour into greased casserole and bake for 1 hour at 350 degrees.
